Estonia is perhaps the most beautiful of the Baltic countries, with its capital Tallinn facing the North Sea and home to Europe’s oldest medieval town center. The old town has been preserved within its gates, with restaurants serving authentic 14th century food (I tried elk and bear meats there), and outside of that area is a very modern city with a buzzing business and technology scene.

Eating at the Old Hansa tavern which serves 14th century food, with all the right decor and outfits from that period (even just candelight in place of electricity!)
